Wisconsin Gouda & Beer Spread

Cheese dips and spreads are staple at get-togethers. We combine classic Wisconsin flavors in this delicious cheese spread!


  • 2 lb Castello Gouda Cheese
  • 3/4 cup Butter, Cubed and Softened
  • 2 tbsp Fresh Chives, Snipped
  • 1 tsp Dijon Mustard
  • 1/2 cup Amber or Dark Beer, room temperature
  • Cocktail Rye, Pumpernickel Bread Slices, or Pinah's Rye Chips for serving


  1. Shred or finely chop the cheese to measure 4 cups
  2. In large bowl, blend shredded cheese, butter, chives, and mustard
  3. Stir in beer until blended
  4. Chill until serving time
  5. Serve spread with desired cocktail bread or rye chips
