Wild Rice Risotto with Bacon
Flavorful and rich, a decadent dish that will leave you wanting seconds!
Ingredients
- 4 slices Nueske's Smoked Bacon, cut into 1/4" pieces
- 2 Green Onions, sliced
- 3 cups Cooked Wild Rice
- 1/4 cup Sour Cream
- 1/2 tsp Pepper
- 3 - 4 tbsp Milk
- 2 tbsp Butter
- 1 cup Vern's Swiss Cheese, Shredded
- 1/2 cup Sartori Shredded Parmesan Cheese
- Dash Salt
Directions
- Fry bacon slightly
- Add onions and butter to bacon
- Continue frying until onions are translucent
- Stir the cooked rice into the bacon mixture along with the cheeses, sour cream, salt, and pepper
- Add milk by the tablespoon until mixture is creamy while cooking over low heat until cheese is melted and everything is well combined
