Southwest Cornbread Casserole
The flavors of taco night with a twist. This tasty casserole will become a family favorite!
Ingredients
- 1-1/2 lb Ground Beef
- 1/2 cup Chopped Green Pepper
- 1/3 cup Vern's Shredded Mild Cheddar
- 1-12oz Whole Kernel Corn
- 1 can French Fried Onions
- 1/2 cup Water
- 1-8oz Corn Muffin Mix
- 1 package Taco Seasoning
- 1-8oz Tomato Sauce
Directions
- In skillet, brown meat and rinse with warm water
- Stir in taco seasoning, water, corn, green pepper, and tomato sauce
- Pour into a 2-quart casserole
- In a separate bowl, prepare corn muffin mix according to package directions, except adding 1/2 can of French friend onions
- Spoon corn muffin mix around outer edge of casserole
- Bake uncovered at 400° for 20 minutes
- Top corn bread with cheese and remaining onions and bake 2-3 minutes longer
