Mini Cheddar & Bacon Potato Nests

Potatoes, bacon, and cheddar cheese…need we say more?


  • 24oz. frozen shredded hash browns thawed
  • 1 egg lightly beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1-1/2 cups Vern's shredded cheddar
  • 1/2 cup sour cream
  • 8 slices Nueske's bacon, cooked & crumbled


  1. In a medium bowl combine potatoes, eggs, salt and pepper.
  2. Use hands to mix well
  3. Coat mini muffin pans with non-stick cooking spray
  4. Spoon 2 heaping tablespoons of potato mixture into each muffin cup
  5. Use fingers or back of spoon to press mixture firmly on bottom and sides of cups
  6. Bake at 450 degrees for 20 minutes or until potatoes are golden brown
  7. Sprinkle cheese into each potato nest; return to oven and bake 2 more minutes or until cheese melts
  8. Top with sour cream, bacon, and additional cheese if desired
