Macaroni & Cheese

You scream, I scream, we all scream for Mac & Cheese? If it’s made with Wisconsin Cheddar Cheese we do!


  • 3 tbsp Butter
  • 1/2 cup Finely Chopped Onion
  • 2 tbsp All-Purpose Flour
  • 1/2 tsp Salt
  • 2 cups Elbow Macaroni, Cooked & Drained
  • 2 cups Vern's Shredded Cheddar (divided)
  • 2 cups Milk
  • 1 cup cooked and crumbled Nueske's Bacon (optional)


  1. Melt butter in medium saucepan over medium heat
  2. Cook onion, if desired, in butter 5 minutes or until tender
  3. Stir in flour, salt, and pepper
  4. Gradually add milk and cook, stirring occasionally, until thickened
  5. Remove from heat
  6. Add 1-1/2cups cheese
  7. Stir until cheese is melted
  8. Add cooked, crumbled bacon
  9. Combine cheese sauce with cooked macaroni
  10. Pour into 1-1/2quart casserole
  11. Top with remaining cheese
  12. Bake at 350° for 30 minutes or until cheese is bubbly and lightly browned
