Cheesy Corn Chowder

The perfect way to warm up after a day of sledding, shoveling and snowman building!


  • 1/2 cup water
  • 1 cup sliced carrots
  • 1 tsp salt
  • 2 cups frozen or canned corn
  • 1 cup Vern's Shredded Cheddar (divided)
  • 2 cups diced, peeled potatoes
  • 1 cup chopped celery
  • 1/4 tsp pepper
  • 1-1/2 cups milk


  1. In a saucepan, combine the water, potatoes, carrots, celery, salt and pepper.
  2. Cover and simmer for 10 minutes
  3. Add corn and simmer for 5 minutes
  4. Add 2/3 cups cheese and milk
  5. Stir until cheese is melted and chowder is heated through
  6. Top each serving with remaining cheese
