Camper’s Cheddar & Sausage Breakfast Hash

Hash is a breakfast staple when you camp. This is our go to when our family unplugs and relaxes in the Wisconsin outdoors.


  • 1/4 cup Butter, Cubed
  • 1 pkg (7oz) Brown 'n Serve Sausage Links, cut into 1/2" pieces
  • 1/4 cup Chopped Onion
  • 12 Eggs, Slightly Beaten
  • Salt and Pepper to taste
  • 2 (20oz) Shredded Hash Browns (thawed)
  • 1/4 cup Chopped Green Peppers
  • 1 cup Vern's Shredded Cheddar Cheese


  1. In a large skillet, melt butter
  2. Add potatoes, sausage, onion, and green pepper
  3. Cook, uncovered, over medium heat for 10-15minutes or until potatoes are lightly browned, turning once
  4. Push potato mixture to the sides of the pan
  5. Pour eggs into center of pan
  6. Cook and stir over medium heat until eggs are completely set
  7. Season with salt and pepper
  8. Reduce the heat
  9. Stir the eggs into potato mixture
  10. Top with the cheese; cover and cook for 1-2 minutes or until cheese is melted
