Wisconsin Gouda & Beer Spread

Ingredients

2 lb Castello Gouda Cheese 3/4 cup Butter, Cubed and Softened 2 tbsp Fresh Chives, Snipped 1 tsp Dijon Mustard 1/2 cup Amber or Dark Beer, room temperature Cocktail Rye, Pumpernickel Bread Slices, or Pinah's Rye Chips for serving

Shred or finely chop the cheese to measure 4 cups In large bowl, blend shredded cheese, butter, chives, and mustard Stir in beer until blended Chill until serving time Serve spread with desired cocktail bread or rye chips
