Wisconsin Gouda & Beer Spread

  • 2 lb ball Wisconsin Gouda Cheese
  • 3/4 cup Butter, Cubed and Softened
  • 2 tbsp Fresh Chives, Snipped
  • 1 tsp Dijon Mustard
  • 1/2 cup Amber or Dark Beer, room temperature
  • Cocktail Rye or Pumpernickel Bread Slices, for Serving



  1. Shred or finely chop the cheese to measure 4 cups
  2. Reserve remaining cheese for another use
  3. In large bowl, blend shredded cheese, butter, chives, and mustard
  4. Stir in beer until blended
  5. Chill until serving time
  6. Serve spread with cocktail bread
