Havarti®
 
SPICED APPLE-GRILLED HAVARTI SANDWICHES
3 tablespoons butter
2 large Granny Smith Apples,
    cored and thinly sliced
4-6 tablespoons sugar, to taste
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1 tablespoon apple-brandy (optional)
8 thick slices day-old bread
8 thin slices Wisconsin-Style Havarti®
Melt butter in a skillet over medium heat.  SautŽ apples 3-5 minutes.  Add sugar, cinnamon and cardamom.  Toss to coat apple slices with the sugar and spices.  Remove pan from heat.  Set aside.
Lay four slices of the bread on a griddle. Top with one slice of Havarti, one fourth of the spiced apples, and another slice of Havarti.  Place remaining slices of bread on top of all.  Butter sandwich tops.  Turn over.  Butter again.  Place griddle over medium heat.  Brown on each side 3-5 minutes, until golden and Havarti is soft.  Cool 5 minutes before serving.  Makes 4 servings.



WISCONSIN STYLE HAVARTI® PIZZA
1 tablespoon vegetable oil
8 oz. sliced mushrooms
1 bulb anise or fennel,
    trimmed and thinly sliced
1 medium onion, thinly sliced
1 clove garlic, finely minced
Salt and pepper to taste
1 10-inch prepared pizza crust
1/2 cup pizza sauce
1/2 pound peeled, deveined
    and cooked shrimp
2 cups (8 oz.) shredded
    Wisconsin-Style Havarti® cheese
Preheat oven to 400¡F.  In a large skillet, heat oil over medium heat.   SautŽ mushrooms, anise, onion and garlic until softened, but still crisp-tender, about 5 minutes.  Drain.  Spread pizza crust evenly with pizza sauce.   Distribute vegetables over sauce.  Arrange shrimp on top of vegetables and top with Havarti.  Bake 20 minutes, until golden and bubbly.  Cool 5 minutes before cutting into serving pieces.
Heritage:
Havarti, a milder version of German Tilsit, was first made popular in Denmark.  Many cheesemakers in Wisconsin produce a product similar to its Danish cousin.  However, the Center for Dairy Research at the University of Wisconsin-Madison developed a special, Wisconsin-Style Havarti® that is firmer in texture and more buttery in flavor than other types.  Wisconsin cheesemakers produce Havarti flavored with such ingredients as dill, caraway, or hot peppers.
